Turkey Pasta Salad


1/3 cup mayonnaise

1/3 cup sour cream

1/3 cup light Italian dressing

2 tablespoons organic apple cider vinegar

2 cups penne pasta cooked until al dente and rinsed with cool water

6 sprigs of parsley, finely chopped 

1 celery stalk, cubed

1/2 cup dried cranberries 

1 shallot finely chopped

1 cup shredded carrots

1/2 teaspoon sugar

2 tablespoons mustard

2 hardboiled eggs, chopped

1/2 cup sweet peas

1/2 cup sweet corn kernels

1 cup of shredded Turkey breast


In a small bowl, stir together the mayonnaise, apple cider vinegar, Italian dressing, sour cream, shallots, mustard and sugar.
In a separate bowl add pasta, celery, cranberries, corn, peas, turkey, parsley, carrots and eggs. Pour half the dressing over the vegetables and pasta and toss. Continue to add dressing and toss until fully coated.  Reserve a small amount of dressing for serving
Cover with airtight lid or plastic wrap and chill
