Bake and saltfish

Lovely weather this morning for a warm bake and #saltfish #buljol….good morning. Recipe for bake 👇

2 cups plain flour 

2 tbsp. sugar

2 tsp. baking powder

1 tsp. instant yeast

½ tsp. salt

2 tbsp butter

Milk

Preheat oven to 350 degrees. Place a cast iron skillet on medium heat and rub lightly with vegetable oil. 

Sift together the flour, baking powder, sugar, yeast and salt.  Rub in the fat and slowly mix enough milk to make a smooth dough.  Cover with plastic wrap and allow the dough to rest for at least 30 minutes. 

Roll each out on a floured board with a rolling pin to about a 1” thick.  Place dough in cast iron skillet. After 3 mins place cast iron skillet in oven and bake for 20mins. 

Remove, cut and serve warm!

Turkey Pasta Salad

Turkey Pasta Salad

Ingredients

1/3 cup mayonnaise

1/3 cup sour cream

1/3 cup light Italian dressing

2 tablespoons organic apple cider vinegar

2 cups penne pasta cooked until al dente and rinsed with cool water

6 sprigs of parsley, finely chopped 

1 celery stalk, cubed

1/2 cup dried cranberries 

1 shallot finely chopped

1 cup shredded carrots

1/2 teaspoon sugar

2 tablespoons mustard

2 hardboiled eggs, chopped

1/2 cup sweet peas

1/2 cup sweet corn kernels

1 cup of shredded Turkey breast

Instructions

In a small bowl, stir together the mayonnaise, apple cider vinegar, Italian dressing, sour cream, shallots, mustard and sugar.
In a separate bowl add pasta, celery, cranberries, corn, peas, turkey, parsley, carrots and eggs. Pour half the dressing over the vegetables and pasta and toss. Continue to add dressing and toss until fully coated.  Reserve a small amount of dressing for serving
Cover with airtight lid or plastic wrap and chill

Extremely simple…

1 box Pillsbury pie crust

1 pack of your fav hot dog franks

1 tablespoon yellow mustard

1 tablespoon bbq sauce

Preheat oven to 400 degrees. Cut 7 hot dogs into 2″ pieces and set aside. You should get between 14 and 16 pieces depending on the size of the franks. Mix mustard and bbq sauce in a small bowl and set aside. Open one roll of the dough and place on a clean flat surface. Using a rolling pin, gently move the pin along the dough. Brush on the mixture of mustard and bbq sauce. Cut the dough into 5 vertical strips. Now make one horizontal cut through the 5 strips. You should now have 10 strips. 

Rolls each Frank into the dough. Spray a baking sheet and place rolls seam side down. Brush rolls with 1 beaten egg and bake for 25mins….or until golden!
