Spiced Pumpkin Maple Waffles

Ok this is the quickest, most satisfying waffle recipe ever!!

Ingredients

2 cups of your favorite pancake/waffle mix (my fav is Hungry Jack)

1 cup of water

1/3 cup canned pumpkin (I use Libby’s

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

2 tablespoons maple syrup

Coconut oil cooking spray

Turn on your waffle iron. Combine all the dry ingredients, add water, pumpkin and maple syrup and stir until completely mixed together. (Yup ditch the oil and eggs you don’t need it). At this point check the consistency of the batter. The batter should be smoothe and not too runny. Spray your waffle iron and carefully pour batter onto the iron. I usually use a ladle to control clean up!

Keep the waffles in a warm oven until you are ready to serve. Get your toppings station ready!

Walnuts, pecans, maple syrup, peaches, whipped cream, ice cream😋…grab a fork and dig in!

This recipe gives me 8-10 waffles
